
250g sliced mushrooms
1 med white onion
1 large red capsicum
1 tbsp GOURMET INSPIRATION Meditteranean Risotto Seasoning Mix
1 diced roma tomato
1 bottle (approx 400ml) tomato Passata
Fresh basil and parmesan to finish
Saute chopped onion capsicum and mushrooms in a splash of oil. Add diced tomato and seasoning mix, stir well. Add Passata and leave to simmer 20 mins. Serve on your favourite pasta, and sprinkle with fresh basil leaves and grated parmesan. Deliciously simple!
